About a month ago I attended a cooking class with co-workers. It was such a blast! They taught us how to prepare a full three-course meal and allowed us to BYOW (bring your own vino!). Nothing says team building like following cooking instructions and drinking!
Naturally, this sweet loving girl was on the dessert team. Our task…an apple upside down cake. In the past, I’ve made pineapple upside down cakes, so this was a new challenge. The cake came out great, but I knew I could put a little Dayna “stank” on it. Last weekend, I remade the cake, added a few updates and it was delicious! Imagine if an apple pie and a cake had a baby…that’s what is about to go down in your mouth. Side note, in addition to being yummy, this is an awesome recipe if you want to look super fancy at your next potluck gathering. It’s so beautiful! Alright here we go…
Start by preheating your oven to 350° and greasing and flouring your cake pan. I come from an old school southern family so to me greasing your pan is with shortening and flour. I know, I know, it’s not the healthiest option and butter works too. BUT guess what, if I’m going to cheat, it’s going to be real! This is why I’m eating healthy during the week so that I can treat myself to yummy things like this. Now, I digressed, rub shortening all around the pan so that it’s completely coated. Toss in a handful of flour and tap the sides of the pan so that the flour is evenly distributed. Throw out the excess flour from the pan.
Let’s start with the “upside down” portion of the cake. Mix 4 tablespoons of butter and 1/2 cup of light brown sugar in a mixer until creamy. Spoon this mixture in the bottom of your greased cake pan, and use your fingers to spread evenly.
Peel and slice 3-4 medium apples (granny smith’s are my favorite) and arrange them in a fan formation around the edge and within the middle. Once you have them in your desired layout, squeeze about 2 tablespoons lemon juice over the apples.
Moving on to the actual cake. Mix 9 tablespoons of butter (room temperature), 1 cup sugar, 1/4 teaspoon vanilla and 1 tablespoon lemon zest until fluffy. Add 2 large eggs (one at a time) and mix until evenly combined. In a separate bowl, whisk 1 1/3 cups cake flour, 1 1/2 teaspoons baking powder, 1/4 teaspoon salt, 1/4 teaspoon allspice, and 1/4 teaspoon cinnamon. Alternate adding the flour mixture and 1/2 cup of milk into the sugar mixture until all combined. Pour the batter into the cake pan evenly and bake at 350° for 30 minutes. Enjoy!
- 12 tablespoons butter
- ½ cup brown sugar
- 3-4 apples
- 1 cup sugar
- 1 tablespoon lemon zest
- ¼ teaspoon vanilla
- 2 large eggs
- 1⅓ cup flour
- 1½ teaspoons baking powder
- ¼ teaspoon salt
- ¼ teaspoon allspice
- ½ cup milk
- ¼ teaspoon cinnamon
- Butter and flour 9" cake pan
- Mix 4 tablespoons butter and ½ cup brown sugar
- Spread butter and sugar mixture in cake pan
- Peel and slice apples, arrange in cake pan and squeeze lemon juice over arranged apples
- Mix 8 tablespoons butter, 1 cup sugar, ¼ vanilla, 1 tablespoon lemon zest, and 2 large eggs
- In a separate bowl, combine 1⅓ cup flour, 1½ teaspoons baking powder, ¼ salt, ¼ teaspoon allspice, and ¼ teaspoon cinnamon
- Alternate adding flour mixture and milk into sugar mixture
- Pour batter evenly over the arranged apples in cake pan
- Bake for 30 minutes at 350 degrees
