First and foremost, shout out to my BFF Tony C for making this ice cream party possible and buying me one of favorite birthday gifts ever…the kitchenaid ice cream attachment!! Yes, I have a tiny New York kitchen. However, I just have to make it work. There is no greater tool to me then the kitchenaid! I mean it’s literally like a dream machine. Ice cream check. Cakes, cookies, frostings, breads, donuts, pasta…check check AND check! They didn’t even have to pay me to say it; I’m simply a huge kitchenaid fan and it makes my cooking life so much easier. Now, onto this delicious chunky strawberry ice cream.
Being that this was my first go at making ice cream, I needed to follow a recipe pretty closely. First I had to understand the initial texture outcome before adding my special touch. I chose this recipe from Real Simple. It’s super easy, and only includes 4 ingredients: 1 pound of strawberries, 2 cups of heavy cream, 1 cup of whole milk, 2/3 cups sugar and I added a splash of vanilla.
The key to homemade ice cream is making sure that your attachment has lived in the freezer for at least 15 hours. I made the mistake of thinking I could make it directly after work and have a Friday night ice cream party with a buddy of mine…sike! So, my ice cream adventures continued on Saturday, 15 hours later.
After your attachment has frozen for 15 hours or later, add the milk, heavy cream, sugar and vanilla to a sauce pan over medium heat. Stir continuously until all sugar has dissolved. Move to a bowl and allow to chill for about 15 minutes in the refrigerator. Chop your strawberries and add 1/2 of chopped berries to a food processor. Combine both in a separate bowl and set aside.
Add the milk mixture into the ice cream maker, turn to the stir setting, and let it go for 25 minutes. At the 25 minute mark, add the strawberries and continue on the stir setting for another 5-7 minutes.
Add the mixture to a freezer safe tupperware container and freeze for 2 hours. Boom. Homemade strawberry ice cream is served. So creamy, so sweet, and packed with strawberry surprises in every bite! Hope you enjoy, the hubby and I sure did!
- 1 pound strawberries
- 2 cups heavy cream
- 1 cup whole milk
- ⅔ cup sugar
- ½ teaspoon vanilla
- Combine milk, cream, sugar and vanilla in a sauce pan on medium heat.
- Stir continuously until all sugar is dissolved.
- Chill milk mixture for 15 minutes.
- Add mixture into ice cream machine on stir setting for 25 minutes.
- Chop strawberries and add ½ to a food processor.
- Combine all strawberries into a mixing bowl and set aside.
- After 25 minutes, add strawberries to the milk mixture in the ice cream maker.
- Mix on stir for 5-7 minutes.
- Pour combined ice cream into a freezer safe dish with a lid and freeze for 2 hours.
