The last couple of weeks, I’ve been dreaming of taking a vacation and sitting on a sandy beach with clear blue water. Unfortunately, that day is not today and it will be a couple of months before I can hit a sunny beach. However, that doesn’t mean I can’t bring island flavors to my tummy. Enter…the fake-me-out vacation meal. Last night I made jerk shrimp and pineapple skewers and it was delicious. The balance of spice to sweet ratio was awesome and it’s nice and healthy.
This recipe is super simple and literally has 3 ingredients: shrimp, fresh pineapple and jerk marinade. A couple years ago my sister and I went to Jamaica for our annual sisters trip, and during our vaca, I bought this magical jerk marinade to bring back home. I was sure that I would never be able to get my hands on this marinade again unless I went back Jamaica. To my surprise I stumbled upon the same magical marinade in my local grocery store! I was happy but sad at the same time thinking I stumbled on a true native treat, but only to find out it’s on aisle 3 at my grocery store. BUT, it’s all good, still yummy and totally worth it. Start by chopping your pineapple into medium sized cubes and set aside. Remove the tails from the shrimp and pat dry.
Load up your skewers and alternate pineapple shrimp, pineapple shrimp. Season with salt and pepper and spoon on the marinade. A little goes a long way and the longer you leave the marinade, the spicier the shrimp and pineapple will be. Because the hubby doesn’t like too much heat, I usually marinate the skewers for about 30 minutes. We unfortunately don’t have an outdoor space to use a real grill, so I used my cast iron grill pan to achieve the grilled flavor and add the beautiful grill marks. When your skewers are ready to cook, turn your stove on medium heat, drizzle olive oil and allow to heat up for about 5 minutes. Place about 5-6 skewers on the hot pan and cook for 4-5 minutes on each side. Remove from the pan, squeeze fresh lime juice for an extra citrus kick, pretend like you’re on a sandy beach and chow down! Hope you enjoy!
- 1 cup pineapple
- 1 pound shrimp
- 2 tablespoons jerk marinade
- lime wedge for garnish
- Chop fresh pineapple and set aside
- Alternate threading pineapple chunk and shrimp onto the skewer
- Season with jerk marinade and salt and pepper
- Allow marinade to set for 20 - 45 minutes depending on how spicy ya like it!
- Heat grill pan and drizzle with olive oil
- Add 4-5 skewers to the pan and cook on each side for 4-5 minutes
- Remove from the pan, squeeze fresh lime juice over skewers and serve
