Turkey Meatballs with Spaghetti Squash

I was craving spaghetti and meatballs but really didn’t want the guilt of stuffing my face mid-week with a bowl of pasta. So, I tried the latest thing – spaghetti squash and it was damn tasty and totally satisfied my pasta craving! So let’s get to it!
Spaghetti Squash Preheat the oven to 375°. Slice the spaghetti squash in half (length wise) and drizzle olive oil over each half. Season generously with salt and pepper and place flesh down on a cookie sheet. Bake the squash for 45 minutes. Now onto the meatballs!

Dice one medium onion and three large garlic cloves. Add to a pan over medium heat, drizzle with olive oil, and season with salt and pepper.  Toss the onions and garlic until translucent and the smell fills the air with a yummy aroma! Give it a couple of minutes to cool. These will go into the meatball mixture. In a separate bowl add 1lb of ground turkey meat, 1 grated carrot, 2 tablespoons of Italian seasoned bread crumbs, 1 tablespoon tomato sauce, 1/4 cup shredded parmesean cheese, 1 1/2 teaspoon of dried oregano,

1 1/2 teaspoon dried basil, the onion and garlic mixture and salt and pepper to taste. Let your hands get real friendly with the meat mixture and be sure all of the ingredients are well combined. Form the mixture into 2 inch balls. In order to control consistency of the size, use a cookie scoop or melon baller. After your meatballs have been formed, add 1/2 cup chicken stock and 2 tablespoons tomato paste into a deep dish pan along with about 1/4 cup diced mushrooms. After the broth has heated for about 2-3 minutes, add the meatballs to the pan and cook for 5 minutes on each side.

Once your meatballs have cooked, slice about a cup of spinach and add to the pan. Cover and cook down for 2-3 minutes. When you remove the lid, ladle the juices over all of the spinach leaves to absorb the flavor. Add the last couple shakes of pepper and allow to simmer for another 2-3 minutes. By now the squash should be done or close to it. Once you remove from the oven allow it to cool for a few minutes, it will piping hot, don’t burn your finger like I did! It’s super easy to pull apart, grab a fork and literally start to pull from the outside in. AND boom, pasta..well veggie pasta!  Add to your plate and top with meatballs, spinach and fresh parmesan cheese. Guilt free pasta, yay!! Hope you enjoy. 😉

  • 1 spaghetti squash
  • 1 lb ground turkey
  • 1 cup fresh spinach
  • ¼ cup fresh mushrooms
  • ½ cup parmesan cheese
  • 1 medium onion
  • 1 medium carrot
  • 2 tablespoons tomato paste
  • 3 garlic cloves
  • 2 tablespoons Italian breadcrumbs
  • ½ cup chicken stock
  • Oregano
  • Basil
  • Salt and pepper to taste
  1. Preheat oven 375
  2. /2 squash, season with salt and pepper and drizzle with olive oil
  3. Place face down and bake for 45 mins
  4. Brown onion and garlic in pan with olive oil
  5. Combine ground turkey, onion and garlic mixture, grated carrot, 1 tablespoon tomato paste, breadcrumbs, cheese and seasonings
  6. Form into 2 inch balls and add to pan with chicken stock and mushrooms
  7. Cook for 5 minutes on each side
  8. Add spinach to pan and 1 tablespoon tomato paste, simmer covered for 4-5 minutes
  9. Remove lid and simmer for another 5 minutes
  10. Remove squash from over and scrape flesh from outside in
  11. Serve with meatballs and top with shredded parmesan cheese
